This recipe is from a cooking class the kids took during the summer in Santa Rosa in 1998. Jules Michael was the teacher.
Tomato Spaghetti Sauce
1 garlic clove
1 green pepper, minced
1 large onion chopped
1 t. parsley
2 T olive oil
Mix in saucepan and cook gently for 15 minutes. Stir often.
Add:
2 ½ c. chopped tomatoes
2 bay leaves
¼ t. thyme
2 t. salt
1T sugar
Simmer gently 45 minutes, stir often. (Saute mushrooms now.)
Smash, blend or food processor.
Add:
1 can (2 oz.) Tomato paste
Saute, then add:
½ lb. Mushrooms (sliced)
1 T. olive oil or butter
