Chicken with artichokes

Chicken with Artichokes



   Chicken breasts cut into strips or tenders- dry and season with salt and pepper. 

   Olive oil - heat and cook chicken on one side until browned, don't crowd. Move to plate as done. All the chicken should be on the plate.

   1 medium onion - diced
   4 garlic cloves - chopped
   1T fresh parsley - chopped
   1/2 t. saffron 
   oil as needed

Add above to the now-empty pan used for browning the chicken. Saute for 5 min. and add:

    1/2 t. cinnamon

Stir to combine. Then add:

    1 jar artichokes, drained

Nestle chicken (raw side down) back into pan with onions etc. Pour over onions and chicken:

    1 1/2 c chicken stock

Simmer over medium-low for 20 minutes or until chicken is cooked through. 

Remove the chicken from the pan, and turn up the heat to cook down the sauce a bit.

    1/2 lemon - juiced

Add lemon juice to sauce and adjust seasonings. Pour sauce and artichokes over chicken. 

Make pretty w/ chopped parsley and lemon slices. 

Serve with rice... or whatever.
