Coconut-Miso Salmon Curry

Coconut-Miso Salmon Curry

In large pot, heat:

  2 T oil, and add:

  1 medium red onion (sliced)
  2" piece of ginger (minced)
  6 garlic cloves - thinly sliced
  (Add red peppers, mushrooms?)

Cook about 3 minutes. Add:

   1/4 c. white miso - stir frequently until miso is lightly caramelized - about 2 minutes.
   (This really needs to caramelize.)

Add:

   1 can coconut milk
   1 c water
   (Add broccoli and or cauliflower.)

Bring to boil - about 5 minutes. Lower heat, and add:

    1 1/2 lbs salmon - skinless, cut into 2" pieces
    (Add cherry tomatoes)

Simmer 5 minutes.

Turn off heat and add:

     5 oz (5 cups) spinach
     1T lime juice

Top with:
    1/4 c chopped basil
    1/4 c. cilantro

Serve with sliced limes.
