Homemade Pita Bread

Homemade Pita Bread

Use bread machine:

 2 t yeast
 1/4 t sugar
 1/8 c. ww flour
 1 1/4 c flour
 1/2 t. salt
 1 T olive oil
 1/2 c water

Let rise once.

Heat oven to 475. Move the rack to the very bottom. Put a baking sheet on the rack. Let it heat up. 

Divide dough into 8 pieces - or more. Roll into balls. Let rest for 10 minutes. 

Press into disk and roll with rolling pin, rest for 1 minute and roll a little bigger.  1/8" thick. 

Place dough circle on baking sheet. After 2 minutes it should puff. Turn over w/ tongs or spatula and bake 1 more minute.
