Ratatouille

Ratatouille 

Use the food processor for all of it.


For the bottom:

1 onion

1 yellow bell pepper

1 red bell pepper


I sliced then finely chopped with the food processor. Saute in olive oil. Then add:


4 chopped cloves of garlic and 

3 finely chopped roma tomatoes

a few generous dashes of Italian seasoning - or at least basil


Saute for a bit to mix. This all goes in the bottom of the casserole dish. (Pam first)


For the veggies:

1 small eggplant

3 roma tomatoes

2 yellow squash

2 zucchinis


Thinly slice all of these in the food processor. 


For real Ratatouille you would alternately stack and lay sideways so the dish looks pretty. I just toss it all in kind of in layers.


Drizzle with olive oil. I drizzled and then used a brush to paint it around. 


Cover with foil. Bake at 375 for one hour.


Top with fresh chopped Italian parsley.
