Fresh Fruit with Cheese and Peppery Nuts

 1/2 c. coarsely chopped nuts*
 3 T olive oil
 1 T honey
 Salt
 Freshly ground pepper
 2 t. rice vinegar - divided
 6 oz semi firm salty cheese*
 1 1/2 # fresh fruit*

Combine nuts and oil in small skillet - medium heat - cook until golden brown - 5 minutes.  

Remove from heat. Add honey, season with salt and pepper. Add 1 t. vinegar. 

Should be sweet, fatty, lip-smack and spiced. Adjust to taste.

Break up cheese. 

Cut fruit into 1/4" wedges. Place on plate or platter. Sprinkle with salt and pepper, drizzle with remaining 1t vinegar. Tuck in cheese. Top with dressing.


*Suggested combinations:
     Pistachios, feta, oranges
     Pistachios, ricotta, clementines
     Hazelnuts, parmesan, pears
     Walnuts, blue cheese, grapes
